Season for growing:

Black pepper can be grown on any plant; it will cling to the vine and start forming fruit around July or August. By January or February, these fruits are fully mature. Initially, they appear green, but as they ripen, they turn a reddish-orange color. This is the time to harvest the crop.


Processing:

After harvesting, the green peppercorns need to be processed to turn them into the black pepper we buy in the market. The process involves drying the peppercorns, which can be done outside on a clean cloth. The drying should be done in moderate sunlight, and if the sun is too harsh, cover the peppercorns with a thin cloth to avoid overexposure.


Drying:

The peppercorns need to be thoroughly dried to avoid any moisture. Some people use cooking oil to prevent spoilage, but this is not recommended as it can trap moisture. Instead, ensure the peppercorns are completely dry. This drying process can take a couple of days.


Storing Process:

Once dried, the peppercorns can be stored in an airtight container, such as a glass jar. This black pepper can then be used throughout the year. In villages, this method is commonly used, and the processed pepper is kept for personal use while any excess is sold in the market.
